BLOOD ORANGE PANNA COTTA

WITH BLOOD ORANGE COMPOTE

To paraphrase food writer Russ Parsons, “The best panna cotta is like a dream of cream held together by faith and just a little bit of gelatin.” I couldn’t agree more except to say that the best panna cotta just might be this citrusy version garnished with a vanilla-spiked blood orange compote.

SERVES 6

PANNA COTTA

1/2 cup [120 ml] fresh blood orange juice, plus zest of 2 blood oranges

1 Tbsp fresh lemon juice

21/2 tsp unflavored gelatin

1 cup [240 ml] whipping cream

1/2 cup [100 g] sugar

1 vanilla bean, split lengthwise

Pinch of kosher salt

11/2 cups [360 ml] buttermilk

BLOOD ORANGE COMPOTE

1/4 cup [60 ml] water

1/4 cup [50 g] sugar

2 Tbsp fresh lemon juice

1 vanilla bean, split lengthwise

Zest of 1 blood orange, plus 3 blood oranges, peeled and sectioned
